Coconut Burfi

This recipe is one of the easiest desserts you could make in little or no time.

Ingredients

Filling
  • 2 cups dried coconut powder
  • ¼ cup coconut cream
  • Sugar as per taste
  • A few saffron strands
  • Some thinly sliced pistachios for garnishing

Instructions

Burfi
  1. In a medium pan, roast the coconut powder on a low flame for about 1 to 2 minutes.
  2. Gradually add coconut cream to the roasted coconut. It should remain moist and not become soggy.
  3. Add sugar as per your taste.
  4. Add saffron strands.
  5. Cook for 2-3 minutes.
  6. Turn off the heat and transfer into a separate bowl. Let it cool down completely.
  7. Form the balls with the use of an ice-cream scoop and place them into mini muffin wrappers (as shown in the image).
  8. Garnish with pistachios. The burfi is now ready to enjoy.
