Peanut Noodles

My son goes nuts over these peanut noodles!
Ingredients
- 1⁄2 box fettuccini noodles
- 1⁄ 4 cup peanut butter (smooth or chunky)
- 1 tsp sesame seed oil
- 1⁄ 2 tsp crushed red pepper
- Pinch of black pepper
- Salt to taste
- 1 tbsp rice vinegar (or 1 tsp amchur)
- 1 tbsp dried cilantro
- Optional garnish – sesame seeds
Instructions
- Cook the noodles as per the instructions on the box. Then, drain and rinse the noodles and reserve the cooked water on the side.
- Whisk together the remaining ingredients with 1⁄2 cup of the cooked water and place on low heat.
- Add in the noodles until coated. Add additional water if needed to get the consistency you desire.
- Taste and add additional spices to your liking.
- Garnish with sesame seeds and enjoy.
- Substitute/variations:
- Can substitute fettuccini noodles with spaghetti or other vegan noodles.
