Peanut noodles

My son goes nuts over these peanut noodles!

Ingredients

  • 1⁄2 box fettuccini noodles
  • 1⁄ 4 cup peanut butter (smooth or chunky)
  • 1 tsp sesame seed oil
  • 1⁄ 2 tsp crushed red pepper
  • Pinch of black pepper
  • Salt to taste
  • 1 tbsp rice vinegar (or 1 tsp amchur)
  • 1 tbsp dried cilantro
  • Optional garnish – sesame seeds

Instructions

  1. Cook the noodles as per the instructions on the box. Then, drain and rinse the noodles and reserve the cooked water on the side.
  2. Whisk together the remaining ingredients with 1⁄2 cup of the cooked water and place on low heat.
  3. Add in the noodles until coated. Add additional water if needed to get the consistency you desire.
  4. Taste and add additional spices to your liking.
  5. Garnish with sesame seeds and enjoy.
  6. Substitute/variations:
  7. Can substitute fettuccini noodles with spaghetti or other vegan noodles.
