Protein Laddoo

A tasty wholesome alternative to protein supplements, this laddoo is a hit with kids and adults alike. This has been used by my patients who are looking to build their body or just want to increase their protein consumption.

Ingredients

  • 1 cup Yellow Moong dal (Yellow Split gram lentil)
  • 1 cup Chana dal (Split Chickpea lentils)
  • 1 cup Masoor dal (Red lentil)
  • 1 tbsp Sesame seeds
  • 1 tbsp Pumpkin seeds
  • 1 tbsp Sunflower seeds
  • 1 tbsp Watermelon seeds
  • (Optional) 1 tbsp of any other seeds like charoli, cucumber, poppy seeds
  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1/2 cup chia seeds (optional)
  • 1 cup dried coconut powder
  • 2 cups Dates (remove seeds)
  • 1 cup dried apricots, raisins, any other dried fruits
  • 1/4 tsp of garam masala
  • 10–12 elaichis (cardamom)
  • Pinch of rock salt

Instructions

  1. Roast the dals, each one separately on low flame until aromatic.
  2. Roast the seeds, each one separately on low flame until they become golden and/or crunchy.
  3. Roast the nuts (if using) separately until they become golden. If not using nuts, substitute with an equal amount of mixed seeds.
  4. Lightly heat the pan on a stove, put the flame off, and toss the dried coconut for less than a minute to make it warm and crisp.
  5. Follow the above process for the poppy seeds. Do not roast the chia seeds.
  6. Grind the roasted dals into a powder, either all together or one at a time, whichever is convenient.
  7. Mix the roasted seeds and nuts together.
  8. In the blender jar, make one layer of roasted seeds and nuts, top with one layer of powdered dals, and one layer of dates and dried fruits. Top with a layer of the coconut and chia/poppy seeds.
  9. Repeat.
  10. Add the salt, cardamom, and garam masala.
  11. Process everything together until they start forming a gooey consistency and just start to release oil.
  12. Empty the mixture onto a plate.
  13. Make small laddoos and store in an airtight jar. They remain fresh outside for a week.

Notes

To make the seeds and nuts more digestible, one can soak them for five hours, wash and change water at least three times, and then sun dry them for a few hours.

Consuming just a handful of mixed seeds provides us with all nine essential amino acids in adequate amounts for our body to create complete protein for itself. It is also much safer for the liver and kidneys than protein supplements.
