Samak Baked Bread

Ingredients

  • Pre-soaked barnyard millet 1 cup in 1 cup water (8 hours).
  • 1/2 cup soy/almond milk.
  • 1 tablespoon lemon juice.
  • 1/4 cup flaxseed powder.
  • 2 tablespoons psyllium husk.
  • 3/4 cup water.
  • Salt 1 teaspoon
  • Oil 1 1/2 teaspoons.
  • 3/4 teaspoon baking soda.

Instructions

  1. Grind the barnyard millet with ½ cup of water.
  2. Add ¼ more only if needed.
  3. Add the lemon juice to soy milk and let it stand for 10 minutes.
  4. In a separate bowl, add the flaxseed powder, psyllium husk, and mix it.
  5. Add ¾ cup of water.
  6. Mix and let it rest for 5 minutes.
  7. Add the almond milk and vinegar mix to this.
  8. Add the salt, oil to this and mix.
  9. Add the ground millet and mix gently.
  10. Add the baking soda and mix.
  11. Line a bread tin with (plant-based) butter paper and grease all sides with oil.
  12. Pour the batter in the bread tin and tap it.
  13. Preheat the oven to 160º C and bake the bread for about 40-45 minutes.
