Vegan finger millet (ragi) cookies

The most delicious finger millet (ragi) cookies, loaded with calcium & fiber. These are suitable for people suffering from diabetes, thyroid, PCOS & other lifestyle disorders.

Ingredients

  • 1/2 cup finger millet (ragi flour)
  • 1/4th cup cashew butter
  • 1/4th cup jaggery powder
  • 1/4th cup desiccated coconut
  • 1/2 tsp cardamom powder
  • 3/4 tsp baking powder
  • 1/8 tsp salt
  • 2-3 tbsp plant-based milk

Instructions

  1. Dry roast finger millet (ragi) flour for 2-3 minutes & let it cool down.
  2. In a bowl, take cashew butter & jaggery powder & mix well with electric beater or hands.
  3. In a separate bowl, mix all the dry ingredients well.
  4. Add the dry ingredients to the butter & jaggery mixture.
  5. Now add desiccated coconut & cardamom powder.
  6. Mix everything together into dough by using plant-based milk.
  7. Shape into cookies & refrigerate for 30 minutes.
  8. Bake in a preheated oven at 180 degrees Celsius for 15-20 minutes.
  9. Take out from oven, let it cool down & store in an airtight container.

Notes

These are the healthy family cookies. Even kids are going to like it!
